Blueberry Cobbler


According to Wikipedia, cobblers originated in British American Colonies.English settlers were unable to make traditional suet puddings due to lack of ingredients and they covered a stewed filling with a layer of biscuits or dumplings together.I am glad they did:)



Ingredients

For the Base

  • 1 cup all purpose flour
  • 1/4 cup of brown sugar
  • 1/2 stick unsalted butter (2 oz)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 cup of milk

For the Top

  • 2 cups of blueberries (fresh/frozen)
  • 1/3 cup of water
  • 1/4 cup of grape molasses/honey

Preparation


Melt the butter and put it in a baking pan. In a large bowl mix, sugar, salt,vanilla extract and beat them. Then add flour and baking powder together and beat again. 

Lay this mixture over the butter evenly. 

In a small bowl add blueberries, molasses and water and put this mixture on very top. Spread them evenly. Bake it in a 350 F preheated oven around 40 minutes. Your cobbler is ready.

Tartolet


Ingredients

For the Dough

  • 2 cups of all purpose flour
  • 1 stick butter (4 oz)
  • 1 egg
  • 1 teaspoon baking powder
  • 1 cup of powdered sugar 
  • 1 teaspoon vanilla extract

For the filling

  • 2 cups of milk
  • 3 tablespoons all purpose flour
  • 4 tablespoons sugar
  • 1 dessertspoon butter
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 dessertspoon starch
  • 6-7 strawberries
  • 2 kiwis

For the sauce

  • 1 cup of fresh orange juice
  • 2 dessertspoons starch
  • 3 dessertspoons sugar

Preparation


To prepare the dough take a large bowl, put sugar and butter in it and knead. Then add egg, vanilla extract and baking powder. Continue kneading it while adding flour slowly. It will be ready when it does not stick in your hands. When it is ready put it into fridge and wait about 30 minutes.

In the mean time to prepare cream beat eggs and sugar in a pot. Then add flour and milk while beating it. Add starch and put in on medium heat. Stir it constantly until it become thick, then turn off the heat and add vanilla extract and butter and stir again.

Take the dough from the fridge and with the help of a roller make thin sheet and cut circular pieces out of it with a cup. Put circular pieces in the pan and make holes with a fork on the bottom of these pieces.

Bake them 350 F preheated oven about 20 minutes.

To prepare the sauce make fresh juice from 2 oranges, you will get 1 cup of orange juice. Put it in a pan, add starch and sugar. Then cook on low heat until it gets thick like a jell. 

When the pastries cooled down put cream on each of them.

Then put chopped fruit on top of the cream. You can use strawberry, kiwi, banana, pineapple... On very top put the sauce and keep them in the fridge about one hour. Your tartolets are ready, enjoy!

Strawberry Pie


Note: This recipe is for 8 muffin pies.

Ingredients

For the dough

  • 1 and 1/2 cup all purpose flour
  • 1/4 cup sugar
  • 1 egg
  • 1/2 stick butter (2 ounce)
  • 1 dessertspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon crushed walnut
  • 1 teaspoon cinnamon 

For the fill

  • 3 cups of strawberries
  • 1 dessertspoon wheat/corn starch
  • 1 dessertspoon lemon juice
  • 1/2 cup sugar

Preparation


The dough we use for the bottom is exactly same with the one we used for the apple pie. First you need to mix butter with sugar and knead it until the butter gets soft. Then add flour, egg, baking powder and vanilla extract and knead until it become soft like earlobe. See the picture.
In the meantime cut strawberries into two or three pieces, put in a bowl and add sugar on them. After 30 minutes strain the excess water and add lemon juice and corn starch.


With the help of a roller make a thin sheet out of the dough and cut circular pieces. These pieces should be larger than the muffin pans. 


Place the circles on the muffin pan, press with your hand and eliminate air bubbles.

Then fill it with strawberries. I made two of them with blueberries mixed with some sugar.


Take the left over dough and add more flour, brown sugar, cinnamon and crushed walnuts and knead again. Take little pieces from this dough and put over the strawberries. 


You can also make circle pieces and cover the pie with it or cut bands. 


Preheat oven to 350 F and bake them about 30-35 minutes. Wait until it gets cold to take out from the pan. Serve with ice-cream.

Apple Pie


Apple pie is a dessert with a long history. Because of the high price of sugar, apple pies were made without sugar in 14th century. I do not use much sugar in apple pie, so my recipe will be similar to ancient ones.
Note: These ingredients is for one large pie. I used a small pan, so I had some extra dough.





Ingredients

For the dough

  • 3 cups of all purpose flour
  • 1 stick butter (4 ounce)
  • 1 cup of sugar
  • 2 eggs 
  • 1 dessertspoon baking powder
  • 1 teaspoon vanilla extract or powder vanilla

For the fill

  • 4 apples (any kind)
  • 3 tablespoons of grape molasses
  • 4 tablespoons of sugar
  • 1 cup of walnut
  • Cinnamon

Preparation


To prepare the dough first you must combine the butter and sugar, by kneading them together until butter become soft. Then you need to separate the yolk and white for only one egg, and spare the yolk to use later. Add one egg, one egg white and vanilla to the mixture, then mix the flour and baking powder in a bowl and scatter them together on the mixture with the help of a large strainer. Adding the flour and baking powder together with a strainer makes baking powder spread all over the dough evenly and rise better. The dough in the picture is dark, because I used brown sugar. While preparing the fill, you can keep the dough in the fridge.


To prepare the apple mixture, peel, cut and grate the apples and put them in a pan with sugar. Cook them together until it become juicy, then take it from the heat and add crushed walnuts, cinnamon and grape molasses. Actually what makes this apple pie different from others is the grape molasses, as it does not contain any added sugar (if you can find all natural one), but tastes very good. You can find grape molasses in the stores which sell Middle East food.



Take the dough and spare approximately one fourth of it to use later. Take a round shape pan and apply some oil or butter on the base to prevent sticking. 

Then put the dough on the base and give it the shape of the pan with your hands, you can also make a thinner dough on the counter by using a roller and put it on the pan afterwards. Then put the apple mixture on top of the dough, spread it evenly. 

Take the rest of the dough and give it an oval shape with a roller. 

Cut about half inch bands and put them on the apple mixture vertically and horizontally to make squares.  Apply the egg yolk on these bands with the help of a brush.

Preheat oven for 400 F0 and bake it about 30 minutes until the top bands become darker. Enjoy!
