Sweet Potato Sandwich


For a long time I tried to find a way to eat sweet potato, so when I encounter this recipe on a vegetarian website, I tried and liked it a lot.

Note: This recipe is for 7-8 sandwiches.










Ingredients

  • 2 Sweet potatoes
  • 1 can of Lima beans 
  • 3 tablespoons tahini
  • 1/2 cup of whole wheat flour
  • Salt, black pepper, cumin, oregano, red flare pepper (any kind of spice you like)
  • 3 avocados
  • Lettuce
  • Mustard
  • Olive oil

Preparation



Boil sweet potatoes until they get soft, they peel and crush them in a large bowl. Add beans and tahini first, and when they are all mixed add flour and spices. You can use a food processor if you wish, but I prefer to do it with my hands


Take a pan and put a little bit olive oil, and take small patches from the mixture and cook them on the pan. 

Take a wheat sandwich bread, after putting some mustard on it, place one patch, sliced avocados and lettuce. You can sprinkle more spice on the top.
