For a long time I tried to find a way to eat sweet potato, so when I encounter this recipe on a vegetarian website, I tried and liked it a lot.
Note: This recipe is for 7-8 sandwiches.
Ingredients
- 2 Sweet potatoes
- 1 can of Lima beans
- 3 tablespoons tahini
- 1/2 cup of whole wheat flour
- Salt, black pepper, cumin, oregano, red flare pepper (any kind of spice you like)
- 3 avocados
- Lettuce
- Mustard
- Olive oil
Preparation
Boil sweet potatoes until they get soft, they peel and crush them in a large bowl. Add beans and tahini first, and when they are all mixed add flour and spices. You can use a food processor if you wish, but I prefer to do it with my hands.
Take a pan and put a little bit olive oil, and take small patches from the mixture and cook them on the pan.
